My iPad and my husband’s iPad sync my photos, apps, etc. how do I unsync, he doesn’t want all my stuff on his iPad.

Stop sharing an Apple ID. Apple IDs are meant for only one person.
You'll need to sign out of his Apple ID on your iPad, or he'll need to sign out of yours on his (depending on what Apple ID you are using) and sign in with a different one. Otherwise both devices are assumed ot belong to the same person, AND and by extension all content is assumed to need be the same on both.
If one of you does not have an Apple ID, you will need to create one.
