Let's say I have a file open on my desktop. Let’s say it’s a Pages doc. How do I see the folder in which it resides? Quickly. I don't want to open a search window and find it that way. I would expect that I go to the Menu where I might find something under View which would say "show in enclosing folder". But nope, not there.

Just right-click on the Pages icon in the Title bar of the document:

What I do is to add the Path icon to the window's toolbar.
View menu > Customize Toolbar...

I'm not sure if that's the example you want to use, since the location of a file on your Desktop is ~/Desktop.
You can run this command in terminal to show the path in finder
defaults write com.apple.finder _FXShowPosixPathInTitle -bool true
You can disable by typing false at the end, is this what you're looking for?

You’re right. I should have simply said “Let’s say I have a file open. Let’s say it’s a Pages doc.” However I could not find an icon called “Path” in the Toolbar. But thanks for replying anyway.
