Apple doesn't say why so we know no official answer and are not allowed to speculate on this site.

Why? Apple doesn't read here for feedback. If you want to complain to Apple that your favorite holiday has not been included on the calendar, use the feedback page:
I know I'm going to put up a big fuss over the lack of Saturnalia. It's really appalling that it isn't on the calendar.
Checked at my coffee shop today, everyone here running 11.2.5 (and some with 11.2.6 and subscribing to the US Holidays calendar is showing Easter. The atheist opposite me is enjoying this year because Easter is on April Fool's Day.
This was an issue on my devices too, but it looks like it is fixed now as of this week. I have iOS 11.2.1... I'd like to note that I think Apple updated it without requiring a user to update to the latest iOS 11.2.6 (which I plan to do later today). If the issue comes back after the update, I'll voice it here.

I'm subscribed to US Holidays, running 11.2.6 on my iPhone and High Sierra 10.13.3 on my Mac. No Easter for me but April Fool's day and coffee shops are more my speed.
