The newest iOS 11.3 update enables a feature that asks if you're sure you want to delete a text message/iMessage once you choose the delete option. It's making me crazy! I tried searching through the settings to remove this deletion confirmation, but can't find anything on the topic. Is there any way to remove this feature?

No, Apple doesn't consult with users. Instead, they see what users do with their phones and often introduce features based on what they perceive as a real need. This is one such feature. Daily, multiple users come here to these user only forums begging for help to recover an accidentally deleted text message. In most cases, the only way to get the message back is to restore from backup, which often people simply don't have.
So, this very small change was introduced to help the countless thousands of users to ensure when they use swipe to delete that they truly do want to delete the message.
Are you aware there is another simple method to delete messages that will not ask you to confirm you want to delete? Yes, Apple provided the best of BOTH worlds to users. Simply use the Edit/Tap Messages(s)/Tap Trash icon and voila, message(s) delete without confirmation. That can't be any more cumbersome could it? It's three steps, just like it was before on swipe to delete.
Amazingly stupid usability modification!! This is a high school programmer mistake!! The single, delete verification after swiping should be enough. Why should I be forced to confirm my confirmation!?
I’m sorry, but one forced confirmation is enough. If an individual wants, or some individual needs, more “parenting” it should be an option. But to force this on the entire community is poor design—or as you say, poor programming. I understand the objective. There are better ways to achieve it.

First, it is not a mistake.
Second, you are not confirming a confirmation. You are swiping and selecting Delete, then confirming that you want to Delete. So, you are confirming your selection of one of the two options that come up when you swipe.

Have you noticed that when some people disagree with a choice instead of making a cogent, logical presentation they attack the people whose choice they disagree with? This is called an ad hominem argument, and essentially means they have lost the argument.
Gail, you are essentially taking 3 actions to delete a message. It should be an option to turn off so those of us who don’t want to waste our time and are competent enough to ensure we aren’t deleting impoctant message, can just simply delete an unwanted message! Just give the option to turn off the confirmation.
Yes I make mistakes…but I learn from them, take responsibility for my own stupidity and move on. I don’t want or need my phone asking me if I really mean it to do what I’ve told it. This “feature” is a definite step in the wrong direction for me - as is the ridiculous idea of WiFi or Bluetooth not being switched off when you tell it to do so. From CC. And before you say it…I have submitted feedback to Apple.

It's not possible to tell it to switch off from the control panel. Besides, there is never any need to turn off WiFi or BT.

However, it does seem to have cut down on the number of posts from people asking how to recover texts they deleted by accident. So, while it may be a minor inconvenience for you, it has prevented major inconveniences for a lot of people, probably including the poor support people who had to deal with hysterical people demeaning that Apple magically restore their deleted texts.

If you're trying to turn WiFi or BT off from the Control Center, it's not going to work as the CC has no feature for doing that. It does allow you to disconnect from WiFi and BT networks, a feature that was long overdue and generally more necessary than actually turning off either.

You will still be prompted on your iPhone. The suggestion you provided only works on a Mac.

It's always a good idea to read the thread you're planning on posting in before posting. Especially in a long thread, you'll probably find that your question has already been answered. The feedback link has been posted more than a dozen times in this 59 page thread, including on the first page. Also posted repeatedly, including on this page, is the reason why this feature was added.

Well that wasn't very inclusive of you IdrisSeabright. Perhaps you might consider that the more people that complain, the more likely the big A will do something. Also, who could be so naive as to think that Apple isn't aware of what's being said here. No trillion dollar company lets their so-called "community" discussion forums go un-moderated, especially when they're hosted on their own website. The information and opinions that are surreptitiously gathered here by the site's owners have tangible marketing value. Their claim of non-participation is purely a convenience that allows them to continue treating us like the Borg they want us to be.
