Hello Irishphilosoph,


Thanks for asking the Apple Support Communities for help with your iPhone and an Exchange ActiveSync. You should be able to delete the email like any other email account from Settings. This article talks about how it was set up: Set up Exchange ActiveSync on your iPhone, iPad, or iPod touch


If you are unable to remove it, it is possible your device was set up as a managed device. This link has info about device management: iOS Deployment Reference MOBILE DEVICE MANAGEMENT (MDM) - Prevent unenrollment


I recommend speaking to whoever set your device up for assistance. Thanks and have a wonderful day.
