Problem copying iTunes albums to USB drive

If you want the exported files to be in Artist and Album folders, and perhaps need to export an m3u file to retain playlist order, then maybe you should look at m3unify.

If you are copying to USB by the drag-n-drop method, the tracks will copy as individual files. However, if the tracks are properly tagged, the Artist and Album info will be embedded in each file, and will be readable if the receiving system is capable.

Also note that drag-n-drop does not work for files in the cloud or for Apple Music files.

What you see there is the view in Finder when you look at the file with View set to "As Icons." It only shows the filename, and does not show any of the embedded data.

Change the View to "As List." Then click on the column header row, and check off Author and Album (and anything else of interest). They the info will be visible. See below.

Right-click exactly on the words "Date Modified." Do you get more options?

Assuming the format is MP3 or AAC or ALAC or AIFF (but not WAV) the Artist and Album information are embedded in the file and cannot not transfer when the file is copied! What makes you think they are not?
