Can I restore information from a back-up for 1 app only?

I had some critical info in my Notes app. I backed up my phone to the icloud. The apple store disconnected my phone from my prior employer, (This has saved me an absolute ton of battery usage, which was the goal with the disconnect). But now the info from my Notes app is gone.(?) Can I retrieve that info from the back-up? Thx
