Match Siri language on iPhone and HomePod
When I ask my HomePod to remind me to do something my HomePod replies ...

Hopefully you know the answer to the first question I asked. See Change the language on your iPhone, iPad, or iPod touch - Apple Support to check, and if necessary change the language and region of your iPhone and iPad so that they align. Given that HomePod has only been released in the US, UK, and Australia so far, setting it up elsewhere may cause problems. Several people have reported issues with the time being out by varying amounts, and that news services don't work. Weather reporting seems to be OK.

I understood when you set up the HomePod initially it syncs all the settings from the iPhone. I removed the accessory (iPhone) and reset it but HomePod Siri still tells me the languages do not match.
I am in New Zealand and the HopePod was sent to me as a gift from Australia. This may be the issue. I have set the iPhone to Australia region and English (Australian) and re synced but I still get the same problem.
What happens if you go the other way and set both to New Zealand? Or perhaps it is complaining the your regional setting doesn't match your physical location, or the store location for your account? 😕

tt2. I appreciate your help. When I originally set up the HomePod my iPhone was of course on NZ language and region settings so I assumed the HomePod would have copied these settings but it tells me there is a mismatch.
Of course, why would you try changing the settings before you found there was a problem? Just spitballing ideas since I don't have anything concrete to work off. Ah, look under Settings > Siri & Search > Language. Perhaps that is what has to agree with the main device language.

See Reset HomePod - Apple Support and use the power cycle and then hold the top until it beeps three times method to restore the HomePod then try setting it up again.

currently homepod only support english
I only support English and my iPhone and iPad Pro only speak English.
Yet Siri on my new HomePod tells the Siri
language on my devices do not match.
Where are you in the world? Could regional rather than language settings be confusing things? Is everything set up for the same version of English, i.e. all as English (US) or English (UK) etc.?

I will check but I am not sure how to check these languages on the HomePod nor the iPhone 8?

I did a power cycle and HomePod reset as suggested in Apple Support and still the same error.
I've changed the settings under 'Siri & Search' to English (Australia) and the problem seems to be solved. Thanks
