I am travelling to the USA and the prices of an iPhone 8 are approx $200 cheaper than they are here in Australia. My question is whether or not I will be able to purchase an iPhone 8 in the USA (Honolulu) and then put my Australian sim in it and use it once I am home?

And make sure it is really unlocked. Apple sells unlocked iPhones. Some stores, such as Best Buy, say their phones are unlocked because they will work with any US carrier, but they lock to the first SIM used, and won't work with non-US SIMs.
