You don't have to have the number in your contacts to block it. As long as the text has a number, you can block it. Open the conversation. Tap on the little "i" in a circle at the top right of the page. Tap the arrow at the far right of the phone number. Tap "Block this Caller".

No, iOS blocking only works if there is a contact with the information to block. iOS blocking is a blacklisting system - it must be able to lookup the incoming address(es) in the blocked contacts list to do anything.
