Why does my iPhone 7 Plus not sync with the new iTunes update?

Before going to the next steps, go to Settings>your name>iCloud>Photos, and make sure that iCloud Photo Library is not turned on. If it has gotten turned on, then turn it off and try your sync again.

If that is not the issue, then you can try the steps that have usually worked in this type of situation:

1. Reset your iPhone by pressing the Power and Volume Down buttons at the same time until the Apple appears (up to 30 seconds). Be certain that you are pressing down on both buttons.

2. Once the Lock screen displays, connect to iTunes and try the sync again. If that doesn't resolve the issue, go to the next step.

3. Connect your device to iTunes, and uncheck the Sync option for photos and movies and sync, then recheck those options and the specific albums or movies you want to sync and try the sync again.

What do you mean it won't sync? What happens when you try to sync your device to iTunes on your computer?

What do you mean you cannot add anything to your phone? What are you trying to add and how are you trying to add it? And what happens to prevent that from being successful?

And what are you trying to "delete from iTunes"?
