Server 5.5 Clean Install on High Sierra

I've got a Mac Mini that previous ran Server 2.2.5 and Mountain Lion which I've upgraded to High Sierra. I want to install Server 5.5 on this but get an error message "Unable to set up Server" " This version of Server does not support upgrading Server data on this volume ....." I don't care about the old Server data. How do I force a clean install of Server?

That's going back a bit in time, but moving aside /Library/Server/ or deleting SHOULD do the trick. Although, I think some of those earlier versions still stored settings in /etc/ and data in /var/. I'd start with /Library/Server/ though.
