但是利用按右鍵“為所選的影片編碼” 那個功能,編碼進度在右上角的進度欄,一直顯示完成進度0,為什麼會這樣呢?

About the “Encode Selected Video Files” feature in Finder from the contextual menu: -
It seems the issue is, that there is no feedback to the user about the progress (percentage stays at 0%), even though the conversion is happening and will finish in the background. You just won’t know it until the process is completed.
I do get to see the spinning gear icon in the menu bar, but (when clicking for more details) the percentage stays at 0% for me as well, and the new .m4v/.mov file stays at 0 bytes, until conversion is finished (then it shows briefly 100%). [You can also see that it is still working, by looking for the relatively high CPU load in Activity Monitor by process VTEncoderXPCService.]

You may need to use a converter application such as some that appear in App store free.
An older ASC discussions article says several things about converting and quality/loss.

There is a different codec for iOS versions of .mov and mp4 conversions, than Mac & PC versions.
