It is what it is. I remember going to an Apple Store once needing an appointment where I knew I would need to make a return visit. I tried booking online from one of their demo computers, but only found that there were no appointment times available for the one week window that it allowed. So I asked an employee what to do, and was told that to talk to the guy with the iPad standing near the Genius Bar, and that he would have a two-week window of appointment times. He showed me the list of available appointments for my device type (appointments are for device specific). Even the appointments 8 days ahead were completely booked, and those could only be made in-person.
The other thing is to make your online appointment first thing in the morning when the next day becomes available, although I don't recall what time this is exactly.
