Sometimes my Watch wakes when I walk into the room because of vibrations through the floor. This feature is called Nightstand mode.
Do you know how to disable it?

From your description your watch is working as designed. While charging the screen will blank after a short delay, and will wake again to show the time if the watch detects movement. Be aware the movement detection is very sensitive, I can wake the screen on my watch simply by tapping the corner of the coffee table where it is charging.
