unwanted Safari website "databases"

In Manage Website Data, Safari Preferences, "Cookies" delete easily, but "databases" pop right back up. Should I select "delete all" with those unwanted databases selected, or does "delete all" delete literally "all" entries in the entire list? I want to keep some cookies and databases, for trusted sites.

Select the Database file of those files you don't want to keep and click the Remove button at the bottom.

If that doesn't help"

Delete Databases

Remove the item from Reading List, Bookmarks, iCloud Tabs and History.

Log out of the sites if you have logged into these sites.

Empty shopping carts, bags, etc.

Backup your Mac.

Quit Safari.

Hold the Option key on the keyboard down and click the “Go”menu in the Finder menu bar.

Choose “Library” from the dropdown.

Scroll down the list.

Click open the Safari folder.

Scroll down the list and click open the “Databases” folder.

Click open the “IndexedDB folder”.

If you find the items there, right click and choose “Move to Trash”

or select all and move to Trash.

Thank you, Dominic and Eric - Is the only solution a venting session on my computer with a hammer, followed by a firm resolution of digital abstinence? Where are the guys with comparable skills, having the desire to do real good for one's neighbor? Surely there is a way to defeat this unwelcome transgression into the property of others.
