How do you play downloaded music only?

even in flight mode, music attempts to play songs from My iTunes library on my iMac even though I have not downloaded them to my phone. How do I stop it attempting to play these songs? It just plays silence! If wifi is on, the music app then connects to itunes I guess and streams content. I chose songs I want to carry with me, and don’t want to stream content that might be in my iTunes back home. So difficult to understand or work music on iOS 11. Is there a way to actually just play music that’s on my iPhone and nothing else but?

iMac, OS X Yosemite (10.10.3), No iPhoto after OS X upgrade

When you open up Music select Library and then you'll see Playlists, Artists, Albums, Songs, and Downloaded Music. Select downloaded music and it will only show items downloaded to your phone.

Yes, this displays purchased music you have downloaded from iTunes Store, but the music app plays music from my iTunes library. If I’m out of wifi, I get silence while music attempts to play songs that are not on my phone, and if I’m wifi, it plays songs from my iTunes library that I didn’t copy to my phone. Same applies in flight mode. You can be on a plane and can’t even enjoy your own music. Displaying the songs is ok, playing the songs is not :(
