How to get student discount in HK

You may be able to. Depends on what Apple's policy is. Long ago I was able to use my US faculty ID to get the discount in Australia. But that was 20 years ago. I would give it a try by asking at the store if they will accept your ID for the academic discount.

You must be enrolled in a HK college or university that is part of Apple's program. You should have a student ID card, preferably a picture ID. You need to have it with you at the store.
