Very EASILY. In numbers 5.0, create a new text box. Under "Format", choose "Arrange". Near the bottom of the menu is "Rotate". Pick your angle. I'm not sure why there are so many dead threads saying this isn't possible. I"m sure at one point it wasn't, but it is now. And it's easy.

Your 'easy' solution has been most commonly offered workaround for this issue for over ten years now.
(Actually for far more than 10 years, as it was offered earlier to solve the same issue in the spreadsheet module of AppleWorks (and ClarisWorks before that.)
Most users asking the question are looking for a solution that rotates text contained in a header row cell, not one that rotates a text box containing text.
They want a solution in which the text is carried by the cell—if the table is moved or resized, they want the text to stay in that cell and move with it, which a text box, not part of the table, will not do.
