I am in the process of closing my Google account because I don't like the idea of them scanning my emails. Does Apple do the same? I'm assuming they respect privacy more, but I'm hoping someone here knows.

No, not to my knowledge. Apple does not invade privacy like that.

I called Apple Support and spoke with a representative who stated categorically that Apple does not read or scan the emails and respects privacy. That they hold their customers privacy to the highest standards.
Makes me feel better. 🙂
