Restoring Erased (NOT deleted) Note on iPhone

I somehow erased all of the text within my MOST important note from my iPhone that was synced to the iCloud. I restored from iTunes (luckily had synced 11 days ago!). When I opened the note it was ALL THERE!! ... for 3.5 seconds and then POOF! it auto-synced with the iCloud back to my current ERASED message. HELP!

MacBook Pro (Retina, 13-inch,Early 2015), iOS 10.1.1

I would suggest that you disconnect your device from Wifi for the nonce, then erase and restore it again (probably best to put it into Airplane Mode so you don't have Wifi or Cellular). Once you have restored the Note, copy the entire Note to a new Note. Then, turn on Wifi to see if it will sync successfully to iCloud.
