It looks like 2 different fonts are being used. Have you installed any extra fonts?

I only have an ipad, but it the same iOS, and I can't see the difference in the keyboard that you see. I want to make sure it is not the 3rd party app. Or an extra font (not keyboard) which has gotten installed.

Also go to settings > general > language and region and tell me what the order of languages is on the list. Make sure that simplified chinese is higher on the list than japanese.

What app is showing the characters in your first post?

Exactly which of the various Chinese keyboards provided by Apple are you using?

Do these different font sizes appear in the end product -- the email or message or text doc?

You should move Korean to below Japanese on the language list. Otherwise you might find a Korean font being used instead of the Chinese one you want. Let me know if this helps.
