Iphone backup folder not showing in iTunes

My iPhone backup file inst showing in iTunes, but shows in the "C:\Users\*Name*\AppData\Roaming\Apple Computer\MobileSync\Backup" folder. I cant make another backup cause my phone is stuck in a updating screen. Is there anyway i can load this backup into iTunes or use some third party tool to restore my phone to that backup? Or is it because the backup is from February of 2017 and is a old ios version (probably ios 10 and i'm on ios 11.4)? any help would be much appreciated, thank you.
