On your iPhone, go to the Watch app. Go to My Watch>General>Accessibility>Grayscale and turn that off.

Open the Apple Watch App on the paired iPhone. Tap on the Watch face you wish to change the color and change it.

However - is everything displayed in B&W on the Watch or only a single face? Because the above directions are assuming that it is only one particular face - like I have the Mickey Mouse face set to B&W because it reminds me of the old cartoons but everything else on the AW shows in color.
