Does AppleCare cover water damage to the IPhone X?

As far as Apple 1 year warranty is concerned the answer is no.

Liquid damage to iPhone or iPod isn't covered by warranty - Apple Support

If you have AppleCare+ (that can be bought within 60 days from iphone's purchase date), you can have 2 accidental damages covered at a nominal price).
