How do i name a group text?

you can only do this if everyone in the group text is using an Apple device, it can't be done if it is a mix of Apple and non Apple devices. Send a group message on your iPhone, iPad, or iPod touch - Apple Support

I just checked on my phone, you can only add contacts to a group imessage (all Apple device), if you need to delete someone you'll need to create a new thread, not unless that person willing leaves the conversation.
