My search engine has always been Google. A couple of days ago I went to search something and noticed it automatically went to Bing instead of Google. I went to Safari Preferences but there was no option for changing the default search engine.

Safari->Preferences->Search and the option to change search options is the top pull down menu. If that option is not there then you have other issues to deal with. You may have system corruption or malware that has highjacked your search preference.
Go to Safari Preferences/Extensions and turn all extensions off. Test. If okay, turn the extensions on one by one until you figure out what extension is causing the problem.
