It depends on what it is that's asking and by what means. You didn't say. If you're not sure, the safest play is skip it and then go into Accounts & Passwords settings and tap on the applicable account there. If the authentication request originated from that account, it'll pop up again right then and there and now you know it's really from that account and not a scam.

Thanks a million for the positive feedback! In retrospect, I believe I need to expound and amend my previous answer although you get the general idea which is that there are ways to make sure the prompt is legit without responding to it in the first place. You can immediately invoke app switcher and swipe around to and fro and see exactly which app is presenting the prompt as long as you haven't dismissed it. If it's Settings or Mail or Yahoo Mail, then I would be confident that it's legit but, if skeptical, you can at least now feel free to dismiss it. If it's Safari or some other browser e.g. Chrome then I would be skeptical unless I was using such with the email service web app and it was specifically the web app/page presenting the prompt. Otherwise, tap on the browser app to bring it to the fore and then tap on the Pages icon in the lower right hand corner wherein you'll be able to see exactly which web page is presenting it. If suspicious, close that page by tapping on the X in the upper left corner of the page rather than tapping on the prompt to dismiss it.
Whenever in doubt, accordingly either dismiss it or close the applicable web page and visit the applicable account settings directly. Here I need to amend my previous statement. In Settings, tap on Accounts & Passwords, then tap on the account e.g. Yahoo!. If you don't see a re-authentication request right then and there, tap on the Account email address therein and then after a moment tap on Cancel to go back to the account e.g. Yahoo! main page. It might not be until this point that you'll see the prompt if the service is really calling for it. With Yahoo! it currently will be a Re-enter Password tap-on line with all the other settings grayed out.
If you're using the Yahoo! (Yahoo Mail) app instead of the iOS Mail app for the Yahoo! account, then same idea but you may need to go into Yahoo Mail within Settings or via the menu in the app. Again, tap on the account email address or security settings and you should get the prompt right then and there if it's really coming from the account service in the first place.
Is this a POP3 email account? They will sometimes prompt for a password if another device such as a computer is downloading email at the same time as your phone (or any other device). To check go to Settings/Accounts & passwords and tap on the account. It will say whether it is POP, IMAP or something else at the top of the setting.

My 8+ updated overnight while charging and now it’s asking me to re-enter my email password. I never logged out of my email and have been getting email just fine despite the repeated messages to re-enter the password. Is it safe to do so, or is that a scam somehow?
IF it's asking for your email password for your email account then enter it.
Ah, Yahoo email is now managed by AOL. 'Nuff said?
Thanks for your suggestion. I just went into my settings and then into my email account settings and it didn’t ask for the password. I have not gone in to add/change any of my password info. It has since stopped asking for the email password. Weird..
Verizon bought both AOL and Yahoo, then consolidated all email for both (as well as BTInternet in the UK, BellSouth, and several others) under AOL's management. But Yahoo email was never great, either.
I had never deleted my email password nor logged out and am continually receiving new email just fine.
It’s my yahoo email account. I checked in the settings if t’s a Pop3 account and it is not.
I know AOL is very old and obsolete now. I had no idea that they run yahoo now.
