Delete emails off iPhone but not Outlook

I'm trying to delete emails from my iPhone but keep the emails in my Outlook. Right now when I delete an email from my iPhone is also deleting it from Outlook and I don't want that.

iPhone 8, iOS 11.4.1, Outlook 2013

Do I have to have my email account set up as an IMAP account? Does that depend on the provider or can I change it to a Pop account?

That depends on the provider. If Outlook is accessing a Microsoft Exchange server it will not support POP. If it is not an Exchange account you must ask the email provider, or check their website. Note that if it supports both iOS will "helpfully" select IMAP as a default. If your ISP does support POP here's a helpful tip to get around this "feature": Forcing creation of a POP or IMAP email account
