Perhaps it's time that everybody having this request, send in a feature/enhancement request:
Mac Pro, macOS High Sierra (10.13.6), iTunes 12.8
I suspect there is something to do with FLAC being open source that means Apple can't/won't incorporate it into its proprietary iTunes.
then why in the latest iPhones/iOS @Limnos that is even more closed?
FLAC's license is very very open and lenient.
MacOS 10.13 will now play FLAC files (you can just select one and hit the Space bar) so perhaps we are edging in the direction of system-wide support.

I just tested this: Select a FLAC track and then "Open With" — the system will suggest QuickTime Player among the recommended applications.
