I know this may seem a bizarre thing to ask, but here goes.
I have dug out my old iPod touch and, owing to failing health, I want to add a timer app that can have multiple timers going at the same time, for different meds and therapies etc
Any suggestions

I seriously doubt you will ever find apps for that iPod Touch model with that final iOS version.
Almost all app developers have discontinued support for their apps below iOS 5.1.1 and many app developers are removing/discontinuing support for their apps under iOS 5.1.1 and earlier.
You would need to purchase the a new or refurbished current iPod Touch 6th generation model or purchase a refurbished or used older iPod Touch 5th generation that would get you to iOS 9.3.5 where there maybe alarm apps still available for iOS 7, 8 or 9.
As it is now, there is no way to get any new apps for that very old iPod Touch model.
