If I end my subscription to Apple Music will I lose all the music I already downloaded?

Yes, of course - like any subscription (or renting a garage) you can't go on having the benefits after you stop the subscription. If you want to keep songs indefinitely you will have to actually purchase them in the iTunes Store.
