My wife started a group text and we later saw that one of the persons who was on the group text was no longer listed as a recipient. Our daughter said she didn’t want her boyfriend seeing the conversation so she had him removed. How is that possible? How did she make his contact disappear from our iPhones?

You can't remove someone else, so your daughter likely had him remove himself (or he did it on his on recognizance).
