How can I copy all of my images from "Photos" to an exteral HDD and maintain the naming convention and folder structure?

Depends on what you mean by 'naming convention'. If you've assigned titles in Photos then you can export the titles as filenames, it's an option in the Export dialogue (File -> Export)


Folder structure is less clear, but you can export each album as a folder of images too, if that's what you mean.

Download and use this user offered AppleScript to export the photos in albums in a Photos library to folder on the hard drive that have the same title as the album: Export Albums to Folders - Jacques Rioux's Script.
