On the Now Playing screen there will either be a shuffle icon (in iOS 9.3.5) or a button with the text "Shuffle" in it (definitely in iOS 11)

The icon looks like this:

With the later (button) method, you have to drag the Now Playing screen upwards in order to see the shuffle control. The button looks like this:
