i keep getting emails and text saying my iphone has been found. It prompts to login assuming i should not. Instead I login to Find IPhone app to check on devices, which appear offline and there's no recent activity shown. Will Erase Iphone delete all data from phone will pictures be deleted as well?

You are correct. Do not respond to such emails. They are from the crooks who stole your devices. If you respond, that will give them the information they need to unlock them. Which is what they're hoping for.
If you reply they may arrange to return the phone, then rob you when you meet.
Would it be safe to reply and say something like "You are the meanest robber ever"? Or worse? aside from your email, what kind of information could they get if you reply?
