I can’t turn my iPhone 7 Plus on because my thumbs are too arthritic to grasp with enough strength to press the button. Is there an alternate way?

If it is off, plugging it into the power adapter will boot it up.

I don’t believe you can get around that type of device “management” other that asking someone else to do it for you ever now and then, it’s common to most if not all smart devices now a days.
It’s one reason my mum uses an old fashioned phone, the buttons are just easier to use and the keypad I believe also turns phone on and off.
I think everyone else has solved the powering on problem, but you may find it helpful to explore the Accessibility features on the phone.
Specifically, Assistive Touch, which gives you a small black square with a white circle in it. It gives you a variety of software menus that reflect things you could do with hardware, such as locking the screen, adjusting volume and restarting the phone.

The only wat to power up a device is to press the power button. Once it is on, you really don’t have to turn it off. When I got rid of my land line last year and only use my iPhone, I have only turned it off a few times just to reset it which I really did not have to do.
I don't believe there is a quick solution to this issue, if your condition is such that it is preventing you using the current device as it was intended/designed, then may I suggest you investigate alternative devices. Have you tried any of the other Apple iPhone's in there range, or even one of the iPad's with cellular connection to see if they are any easier to operate.
It's a long shot, but with iOS 12 just a week or two away you might be fortunate to find something new added to the Accessibility section which may help (Apple are always adding new features to this area), other than that I'm out of ideas I'm afraid.

My phone is my portable office. We rely on constant communication in my business. We work extensively with documents and spreadsheets, sharing them via OneDrive. Because the information on my phone is sensitive, I must lock the screen manually several times a day if interrupted. I need to be able to use that feature.
Happy you have found a solution, I’ve only just started looking under the Accessibility section since this discussion, after owning iPhones and iPads for more years than I care to remember, surprising what you can find when the need arises.

That would be sweet if iOS 12 has some added capabilities. I hadn’t planned on losing dexterity in my hands at such a young age. Thanks for your input!
