If I buy a Apple watch in Hong Kong, can I set up & use cellular in Europe?

Please see Apple Watch - Carriers - Apple for details of the regional models and supporting networks. Be aware Apple Watch and eSIM do not support roaming, the cellular function only works on your home network. If you are roaming the watch will continue to communicate through your paired iPhone providing you have a roaming data service available on the phone.
