I have upgraded my Watch 2 to OS 5 and every time I do anything (press the crown to choose an app, long press the screen to customise it) the screen then moves as if the crown is being “jiggled”.
Anybody else had this problem or know how to fix it?
I would start with a forced reboot to rule out something cranky in the software. Press and hold both buttons until the Apple appears and the watch begins to reboot. If that doesn‘t clear the problem you might have a hardware failure, in which case the best option is Contact Apple Support to arrange checking and service.

Thanks - only just started when I upgraded to WatchOS5 - could be hardware I guess
