Am I missing something or are the new infographic faces missing complications for mail, messages, and phone. If I am not missing something Apple, please fix this now!!

IWatch 4 - check to see if OS 5.1.2 update is installed. If so and still nothing do this: Customize Inforgraph face for Messages & Mail via the customize function on the "watch" NOT using iPhone App... it should work. For some reason the iPhone App is not communicating all customizations.
Receive v4 watch as gift. Will return to Apple Store if I can’t add mail & messages to infograph face.

I'm glad that worked for you, but for me, I added the complications via my phone, NOT my watch.
