Assuming you don't have a work exchange email account set up on your phone then you go to settings - display - auto lock or settings - passcode - required passcode.
If you have work email account, you can't change the settings unless you remove the mail account.

Also drop a note to Strava; app makers can write their apps so the phone always appears busy and the device will not sleep. Navigation apps like Apple Maps, Google Maps and Waze do this so the map doesn't go away as you drive.
