I have two questions which are connected.
1. Can I buy a physical dual SIM version of Xs from Apple stores in USA
2. If I buy a physical dual SIM version of Xs, can I use two physical SIMs in USA or say any other country? (Supposing the iPhones are universal carrier version)

The rest of the world gets 1 physical sim and one e-Sim.
As for the question of being able to use sims from multiple carriers, that is only supported if your iPhone is unlocked and not carrier locked. In theory all unlocked iPhone Xs should support sims from participating carriers.

yes it should work provided the iPhone is unlocked to all carriers.
Your warranty might be affected though if you buy the phone in a different country.
Use caution as you might have to send your phone to china for servicing if it is unable to be serviced in India.
Ok. If I purchase the chinese version from china and then say use it in India with dual physical SIM. I can do that right?
