How do I ignore Epson software update

I have a notification in system preferences > software update for os Mojave that the software for my Epson printer needs to be updated. I DO NOT want to do the update as all it will accomplish is make my 3rd party ink cartridges unrecognizable by the printer. I actually went to a lot of trouble to Uninstall an update that I accidentally performed a couple months ago. I really do not want to see the "1" in the red circle attached to the system preferences icon in my doc for all eternity. Is there a way to ignore this suggested update & get rid of the reminder symbol?
