Software update is offering to update software for a printer I no longer have.. Is there a way to delete the app it's trying to update, or otherwise make it forget that printer?

If you no longer use the printer you can remove it using this method. I don't have 10.14 installed but this method still works as of 10.13

I think I may have answered this: it appears this update also contains drivers for scanners, which I am using. Unfortunate name.
