Does anyone know if you can create Pivot Charts as well as Pivot Tables on Office Home and Student 2016 FOR MAC? I know that Office 2011 for Mac doesn't.

There isn't a difference for the Home and Student version -- i.e., Excel in the Home and Student package is the same as Excel in Office 365. Also note that it is now Office Home and Student 2019 (rather than 2016). See: Choose Microsoft Office Products for Mac

To create a PivotChart on the Mac, you need to create a PivotTable first, and then insert a chart. Once that is done, the chart will behave like a PivotChart if you change the fields in the PivotTable Fields list.

I guess I can choose to purchase either Office for Mac Home and Student 2019 or Office 365 by the sounds of it. Each should have Pivot Table and Pivot Chart functionality.
