i have purchased Series 1 of Beverly Hills 90210 (original 1991) assuming the other series to continue watching would be available (why would you only have 1 series available when there are 10 series of this programme)

Apple has no real control what series of a programme are available. That's entirely up to the rights holders of said programmes.
If they have not made other series available in the iTunes Store, then there's nothing Apple can do about it.
The question should be why CBS has not made the other series available on iTunes.
Also, this is a user to user forum, you are not addressing Apple directly here.
These decisions are in the hand of the content providers. Perhaps not enough interest was shown in series 1. 😕
