iTunes normally maintains one rolling backup per device which it will update once per calendar day. If your backup has been overwritten and you have Time Machine enabled on a Mac or some other regular backup method you might be able to retrieve a copy of your device backup set from that computer. Otherwise as given it is too late. See Archive iPhone backup in Windows for another time. Should you retrieve the backup see Disable iOS backup encryption.

You apparently accidentally hit the backup button instead of the Restore button. iTunes does not do a backup if you choose restore. Your only option is to restore the lost backup from your computer's backup. If you have a Mac and enabled Time Machine this is trivially easy. For Windows if you have a backup routine or you installed one of the many Windows backup applications (or Windows built in backup utility) you can restore it from there.

If you do get it restored you can try guessing the backup password. You get unlimited guesses.
