How install macOS to external USB disk?

Download the installer and when you launch it, you will be given a choice of where to install it. Choose your external drive.

Ah, is it really that easy? I didn't know, though I have upgraded my MBP several times over the years.

Oh, another subsequent question - can I boot from the USB disk later?

I think I know the answer but just want to be sure.

Yes, you should be able to boot from it. Hold the option key when booting for Startup Manager:
