What kind of device do I need to connect a “retro” telephone hand set that has a 3.5 mm plug so that I can talk and listen by Bluetooth that’s paired with my iPhone 6s+, rather than plugging the handset into the iPhone directly?

There's none.
Wouldn't this be the same kind of connector for a two-way headset using a Bluetooth adapter?
