I was trying to use night shift with my 2014 mac mini but the option does not show in display preferences.
Any ideas how to turn night shift on? It works fine with my late 2012 MBP.

You need a compatible monitor for Night Shift as well. It does not work on all monitors. If the monitor you have attached to the Mac Mini is not supported for Night Shift, the option will not be available.

I think the tv/avr is the culprit: Nightshift does not show as an option in Preferences/Display on the the Mac Mini: I have the latest version of Mojave installed.

Night Shift does not fade anything. It merely makes the screen colors a bit warmer. i.e it appears very slightly yellowish in tint.
Also, the list shows monitors that are absolutely compatible with it. Apple would not and could not have tested every single monitor in existence to find each and every monitor that supports it, so there may be monitors that are not listed there that may support it and enable it.
I don’t use a traditional monitor. I use 65” oled and the mac mini is going through an AVR.

I'm not sure how much I believe that "supported monitors" list. I just watched Night Shift fade in on my 2003 Apple Cinema HD display.
Night Shift was introduced on the Mac in macOS Sierra 10.12.4. If it's running 10.12.3, that could be the reason why it doesn't show up in your display preferences. 10.12.4 is compatible with that model of Mac mini, so install the update and you should see Night Shift as an option.
